Palitaw Ni Islaw





Naaalala lko pa, back in the mid2000's when I was in between jobs then as I am now, nagtinda ko ng palitaw for my survival (as a species, hehehe). Super sarap at super lambot ng palitaw ko at murang-mura pa! 3pcs for P10.00 lang. Fresh and mainit pa.

The past weeks, parang napnsin ko yata na malimit akong gumaw ng palitaw. Well, kung naiintriga kayo sa palitaw ko... heto na ang recipe.




Palitaw

Ingredients:
1 Kg. Glutenous Rice Flour
400ml Tap Water
20 grams Sesame Seeds (Toasted)
250g White or Washed sugar
2 Coconuts (Shredded)
Pandan Leaves

Procedure:
Put to a boil around 2 liters of water. Infuse the water with pandan leaves. While the water is coming to a boil, mix together 1(kg) pack of glutenous rice flour and around 400ml water until they become a dough. Traditionally, palapad ang palitaw like a tongue but my style is different. I make them into balls so I can fit as much to the pot while boiling. Then I press them down later to form a tngue-like shape. So where were we... after shaping them into balls, drop them in the pot of boiling water. Once they float, scoop with a slotted spoon onto a bed of shredded coconut meat. Flatten them to the shape of the tongue.

Toast some sesame seeds and add them to the granulated sugar. Top each palitaw with sesame sugar and serve with hot tea!

Makes around 35 palitaws.
